Easy Summer Salad

Looking for a light, delicious salad to enjoy this summer? This one is simple to pull together whether you’re at home or traveling, and it’s easy to adjust and vary to suit your preferences.

Greek Summer Salad

Black beans (rinsed)
Cherry tomatoes, sliced in half
Fresh basil (as much as you like!)
White onion, chopped
Feta cheese
Good quality olive oil
Salt

Mix everything together and enjoy! This is also easy to make ahead; just wait to add the olive oil until serving. It’s wonderful with a slice of bread (to soak up any remaining olive oil) and a glass of white wine.

Or, replace the black beans with white beans, skip the onion and feta cheese, and instead add a good squeeze of fresh lime juice and a dash of cayenne pepper. Also delicious!

Celebrate Bandera (September 1-3): Join the Bandera festivities during Labor Day weekend.
Kendall County Fair (August 31-September 3): Since 1905, Boerne has hosted this county fair, rodeo and livestock show.
Kerrville Fall Music Festival (September 2-3): Another Labor Day weekend event, this festival boasts 3 days of music, craft beer seminars, wine seminars and more.
8th Annual Fredericksburg PBR (Professional Bull Riders) (September 9): Head to Fredericksburg for some real rodeo excitement, food and drinks.
Annual Cajun Festival & Gumbo Cook-Off (September 23): Cajun food, music on two stages, arts and crafts and more.

How to Get a Killer Exchange

Ready to explore the world beyond our four home resorts? With affiliations all over the world and an in-house direct exchange department, it couldn’t be easier to broaden your horizons! Here’s what you need to know to help your exchange go as smoothly as possible:

Contact us with your exchange request as early as possible (8-12 months out is ideal). The more time you give us, the more likely it is that we’ll be able to find just what you want.
Be as flexible as you can with your travel dates, location, unit size, etc.
Travel off-season! This is a savvy traveller’s best tip. Not only is it easier to find accommodations, but you’ll avoid the crowds everywhere else, too!
